Stir-fry recipe for Ginger Shrimp, Mushrooms, and Broccoli

Stir-fry dishes have always been a favorite to many kitchens – they’re quick, easy, and unbelievably versatile. This blog will explore a recipe close to many people’s hearts: Ginger Shrimp with Mushrooms and Broccoli. It’s a dish that bursts with flavor and will surely please your taste buds and body with its healthy ingredients.

Ingredients

Before we start, let’s get our ingredients ready. For this recipe, you’ll need:

  • Shrimp: About 500 grams, peeled and deveined. I prefer fresh shrimp, but you can use frozen ones, too.
  • Broccoli: 1 large head, cut into florets.
  • Mushrooms: 200 grams, sliced. Feel free to use any mushroom you like.
  • Ginger: A 2-inch piece, finely chopped or grated.
  • Garlic: 3 cloves, minced.
  • Soy Sauce: 3 tablespoons.
  • Oyster Sauce: 1 tablespoon for that umami kick.
  • Sesame Oil: 2 teaspoons.
  • Cornstarch: 1 teaspoon, mixed with 2 tablespoons of water.
  • Green Onions and Sesame Seeds: For garnishing.
  • Salt and Pepper: To taste.

Preparations

  • Marinate the Shrimp: Start by mixing the shrimp with 1 tablespoon soy sauce, 1 teaspoon sesame oil, and a pinch of pepper. Let it sit for about 15 minutes.
  • Blanch the Broccoli: Blanch the broccoli florets in boiling water for about 2 minutes, then plunge them into ice-cold water. This process keeps the broccoli vibrant and crunchy.
  • Mix the Sauce: In a small bowl, whisk together the remaining soy sauce, oyster sauce, and sesame oil. This will be our stir-fry sauce.

Cooking

Now comes the fun part – cooking!

  • Sauté the Aromatics: Heat a tablespoon of oil in your wok over medium-high heat. Add the ginger and garlic, and stir-fry for about a minute until they’re fragrant. Be careful not to burn them!
  • Cook the Shrimp: Add the marinated shrimp to the wok. Stir-fry until the shrimp turn pink and are cooked through, which should take about 3-4 minutes. Remove the shrimp and set them aside.
  • The Veggies: In the same wok, add the mushrooms. Stir-fry for a couple of minutes. Then, add the blanched broccoli. Toss everything together and cook for another minute.
  • Bringing it Together: Return the shrimp to the wok, add the prepared sauce, and stir to combine. If you like your stir-fry sauce a bit thicker, add the cornstarch slurry now and cook until the sauce thickens.
  • Final Touches: Season with salt and pepper, and give it a final stir.
